Callan is 1!

Callan had his first birthday party on November 15th. It was a small party with family and close friends. We had a frog themed party, complete with a homemade lily pad cake. Callan loved hanging out with his friends, young & old, and REALLY loved his cake. My mom was visiting for the week and she was a huge help getting everything together, including the quiche (recipe below).

On Callan's actual birthday, November 23rd, we had a small family dinner at our house with Jim, Sandy & Grandpa Mac. I tried to honor Callan's favorite foods (black beans, bananas & oranges). I made black bean chili & Sandy brought fruit salad and a green salad. This time I bought mini cupcakes from the bakery and Callan got his own regular size vanilla cupcake.

Callan is definitely acting like a 1 year old. He suddenly thinks he's a "kid" rather than a baby. He moves around really well...crawling and walking along furniture. He'll crawl over anything to get somewhere too. The dog, the cat, his brother, me...everything is fair game. I expect he'll start walking in a month or so.


Callan got his cast off early in the month and then wore a splint for awhile. On Monday we saw the hand surgeon and he said everything is looking great. He doesn't have to wear the splint anymore and we don't have to go back for another 6 months. How great it must feel to have a bare hand after months of being stuck in a cast & then a splint! Soon he should start using his hand more and bending his thumb like normal!


Thanksgiving was really nice. We had dinner at Jim & Sandy's and then spent the rest of the weekend visiting with the rest of the Guenthers down in Vancouver, WA. We are looking forward to a busy and fun-filled holiday season. We already have a lot of fun things planned. In fact, today Chase and I are working on a gingerbread house!

For all who wanted it, here is the link to the quiche recipe. We found that they actually needed to be cooked for closer to an hour. For the vegetarian quiche we substituted the bacon with red peppers & we just cooked the onions in olive oil rather than bacon grease.
